Beetroot Chocolate Cake




I happened to buy some beetroot on my way home from work yesterday evening. I have always wanted to make a beetroot cake but have been very apprehensive over this as I am not too sure how to handle it. However after some assurance from Aunty Yochana, I decided to give it a try... and the final result.... very moist and yummy.. Here is the recipe:

Ingredients:
130g shredded beetroot
80g melted butter
60g brown sugar
95g plain flour
25g cocoa powder
60g chocolate chips
1tsp double action baking powder
1/4 tsp bicarbonate of soda
2 eggs

Method:
1. Mix melted butter, sugar and eggs and mix well.
2. All in flour, baking powder, soda, beetroot and chocolate chips and mix well.
3. Pour into a 6.5 X 3 X 3 loaf pan for 40 mins at 180C
