First it was the flourless chocolate cake, then came the very sinful chocolate cheesecake and what came next in line is a good mix of dark and milk chocolate mousse cake. I've promised Ming that I would make him this cake when he next returned to Singapore.
Here is the most beautiful and ultimate chocolate cake I've practised and made:
Recipe goes this way:
300g dark cooking chocolate
6 eggs
250g plain flour
200g caster sugar
200g unsalted butter
100g chocolate chips
100g almondmeal
Method
1. In a large bowl whisk together the eggs and sugar until light and fluffy.
2. Melt 300g of chocolate with 200g of butter then fold in the chocolate chips, almond meal and flour.
3. Fold the eggs and sugar into the chocolate and flour mixture, then pour the whole mixture into a 9' pan and bake at 180c for 1 hour.
4. When cake is ready, cool cake and then choose your favourite ganache and spread all over the cake.
