Edith, my colleague from Boston, had given me a favourite recipe of her mum. I tried this cake out this evening and they tasted just heavenly...
As a reward, I will have to give one loaf of this mango pound cake to her.. well that's ok...
Recipe goes this way:
260 g cake flour
40 g Self Raising flour
1 tsp baking powder
1/2 tsp baking soda
250 g salted butter
180 g caster sugar
4 eggs, beaten
140g low fat mango yogurt
60g mango puree
Beat butter and sugar till light and fluffy.
Add in the yogurt and mango puree alternatively with flour, baking powder and soda and stir till well mixed.
Pour the batter into 2 loaf pans and bake for 45 minutes
