I have so many mandarin oranges at home and have decided to whip up a butter cake.
Ta da... here is the cake, moist and yummy:
Recipe goes this way:
250g SCS butter
200g caster sugar
100g madarin orange juice (without skin)
200g Self Raising flour
30g ground almond
1/2 tsp baking powder
1. Beat butter and sugar till fluffy. Add in egg one at a time
2. Add in Self raising flour, ground almond and baking powder and then the juice.
3. Mix well and pour into a round 9' pan and bake for 50 mins at 180C
