Raspberry Streusel Cake

I finally managed to use up all the raspberries that had been sitting in my freezer...This is a really tasty cake... not too sweet and burst with the goodness of raspberries:




Recipe goes this way:

250g cake flour
100g sugar
2 1/2 tsp baking powder
65g butter
120g milk
100g frozen raspberries

Streusel
1tbs sugar
35g cake flour
1/2 tsp cinnamon powder
60g cold butter

1. Beat butter and sugar together. Add in flour, baking powder alternatively with milk. Then add in frozen raspberries

2. Pour into a 7 X 5 tray.

3. Mix all ingredients for streusel and then sprinkle over the cake batter.

4. Bake 180C for 40 mins

I'm a regular reader of ur blog fr Penang. Can I know is d cake flour tht u mentioned in ur recipe refers to superfine flour? Is there any brand tht u can reco n where can I buy them from? Thanking u in advance. Hv a nice wkend.

Wow, this cake is lovely.

I notice very minimum amt of butter is used, so i presumme this is a healthy cake.

I'd love to try this recipe one of these days. :)

I believe you can use superfine flour.
