Moist Chocolate Cake

Another Chocolate Cake that I will be making soon. Happened to chance upon Little Corner of Mine's website early this morning and was rather happy to see this recipe. Can't wait to get to my kitchen this evening to bake the cake...

Recipe goes this way
1 1/4 cup plain flour
1/4 cup cocoa powder
3/4 tsp baking powder
3/4 tsp baking soda
2 tbsp hot water
1 tsp instant coffee powder or granules
1 cup sugar
2/3 cup butter
2 eggs
1 tsp vanilla essence
3/4 cup water

Sift together the flour, cocoa powder, baking powder and baking soda. Set aside.

Dissolve the coffee with hot water. Set aside.

Beat butter and sugar until light and fluffy. Add the eggs one at a time. Beat well. Beat in the coffee and vanilla essence. Gently fold in the flour mixture alternating with water. Start and end with the flour mixture.

Pour the batter into a greased baking pan. Bake at 175° C for 45 minutes or until a skewer inserted comes out

Finally I got the cake done... the cake was extremely moist and perfect. Very nice and wonderful.
